HOW THE TECHNOLOGY WORKS
The core is the secret. The unmatched taste and the twice as long shelf life begin from the inside out.
The ripening process takes place in gas-tight CA ripening rooms (Controlled Atmosphere) with ideal conditions in temperature, CO2, oxygen, and ethylene (C2H4)*.
The conditions are a set of unique parameters, an algorithm, that is actively set for the room. The parameters vary depending on the origin of the fruit. This is because soil quality and weather differ between countries and regions.
The system continuously monitors the levels and controls the ripening process, creating a stress-free ripening in an atmosphere that is controlled and optimal for each fruit batch.
*Ethylene is a signaling substance and hydrocarbon that naturally occurs in fruits. The substance is released by ripening fruits, and by activating this, with precisely the right concentration at exactly the right time, the fruit is helped to ripen faster with extended shelf life.
